Ingredients
- 4 zucchini squash
- 2 cloves garlic, crushed
- 2 tbs. olive oil
- Salt and pepper to taste
Directions
Preheat oven to 350 degrees. Cut zucchini into 1/4 inch slices. Spray a medium sized baking dish with non-stick spray. In the baking dish, toss zucchini, garlic, olive oil, salt and pepper. Bake for 20 to 25 minutes or until zucchini is soft and tender. Cook a little longer is you like them to be crunchy. Turn the zucchini twice to ensure even cooking.
Tips
- For added color use yellow and green zucchini squash.
- Instead of zucchini, try the same recipe with asparagus. Bend 1 asparagus until it shapes. Then cut the others at that length. Bake whole, then chop into pieces for your toddler.
