Chili with Cheesy Bread

Ingredients

For the Chili:

  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1 package mushrooms, chopped
  • 1 can garbanzo beans, rinsed and drained
  • 1 can great northern beans, rinsed and drained
  • 1 can tomato sauce
  • 1/2 can tomato paste
  • 2 cups vegetable stock
  • Salt and pepper to taste
  • 1 tbs olive oil
For the Cheesy Bread:
  • 1 stick butter, room temperature
  • 2 cups flour
  • 2 cups shredded sharp cheddar cheese
  • 1 small bunch chives, chopped
  • about 8 tbs milk
Directions
    In large pot, heat olive oil over medium heat. Sauté onion and garlic for 5 minutes or until the onion is translucent. Add mushrooms and cook 5 minutes. Add beans, tomato sauce, tomato paste, vegetable stock. Cook over low heat for 1 hour, stirring frequently. Add salt and pepper to taste.
    Preheat oven to 375 degrees. While the chili is cooking, make the cheesy bread. In medium bowl, mix the butter and flour together. Stir in the cheese, chives, salt and pepper. Gradually stir in the milk until you form a smooth dough. Roll into a circle and bake for 30 minutes or until the top is browned.
