Ingredients
- 4 chicken breast halves, cut into 1/4 inch dice
- 1 small onion chopped
- 1 garlic clove chopped
- Juice from 1 lime and zest from the rind
- 1 small bunch cilantro
- 1 can pinto beans, rinsed and drained
- 1 cup tomatoes, chopped
- 1 tsp cumin
- Salt and pepper to taste
- 1 tbs olive oil
- 1 cup shredded cheddar cheese
- Whole wheat tortillas
Directions
In large skillet, heat olive oil. Saute chicken for 7 to 10 minutes, or until browned on the outside. Add onion, garlic and pinto beans and cook for 5 minutes. Add lime juice, zest, cumin, salt and pepper. Cook 2 minutes. Remove from heat, add tomatoes. Heat tortillas according to package directions. Fill with chicken, top with cheese and cilantro.
Tips
- Serve with sour cream, salsa and guacamole.
- Goes great with garlic black beans (see recipe).
- Instead of chicken, try hamburger or tofu.
