Potato Onion Dip

Ingredients

  • 1 pie crust, room temperature
  • 1 small onion, diced
  • 3 small potatoes, diced
  • 1 small bunch fresh dill (about 1/2 a cup)
  • 1 cup sour cream
  • 1 cup parmesan cheese, grated
  • 1 egg lightly beaten
  • salt and pepper to taste
Directions
    1. Set oven to 400 degrees.
    2. Spray pie pan with non stick spray.
    3. Roll pie crust onto bottom of the pan.
    4. using a fork poke a few holes into the crust.
    5. In medium bowl, combine onion, potato, dill, sour cream, egg, salt and pepper.
    6. Mix 
    7. Pour into pie crust.
    8. Top with cover and bake for 45 minutes.
    9. Remove cover and bake 15 minutes until cheese is golden and potatoes are fork tender.
