Ingredients
- 1 pie crust, room temperature
- 1 small onion, diced
- 3 small potatoes, diced
- 1 small bunch fresh dill (about 1/2 a cup)
- 1 cup sour cream
- 1 cup parmesan cheese, grated
- 1 egg lightly beaten
- salt and pepper to taste
Directions
- Set oven to 400 degrees.
- Spray pie pan with non stick spray.
- Roll pie crust onto bottom of the pan.
- using a fork poke a few holes into the crust.
- In medium bowl, combine onion, potato, dill, sour cream, egg, salt and pepper.
- Mix
- Pour into pie crust.
- Top with cover and bake for 45 minutes.
- Remove cover and bake 15 minutes until cheese is golden and potatoes are fork tender.
