Ingredients
- Tortilla Chips
- 1 small onion, diced
- 1 cup frozen corn
- 1 can pinto beans, rinsed and drained
- 2 cups shredded and cooked chicken
- 1 small bunch cilantro
- 1 cup sour cream
- 1/2 cup mild tomatillo salsa
- 2 cups shredded cheddar cheese
- Salt and Pepper to taste
Directions
- Preheat oven to 400 degrees.
- In medium bowl, combine onion, corn, beans, chicken, sour cream, 1 cup cheese, salsa, cilantro, salt and pepper. Mix.
- Spray medium casserole dish with non stick spray.
- Line bottom of dish with tortilla chips.
- Top with onion and bean mixture.
- Add another layer of tortilla chips.
- Finish with remaining 1 cup cheese.
- Cover and bake for 45 minutes.
- Remove cover for 15 minutes or until cheese is golden brown.
Tips
- Use store bought rotisserie chicken.
- Use medium or hot salsa if want it spicy.
- Assemble this dish during lunch time and refrigerate. Pop it in the oven one hour before dinner.
