Nacho Cheese Bake

Ingredients

  • Tortilla Chips
  • 1 small onion, diced
  • 1 cup frozen corn
  • 1 can pinto beans, rinsed and drained
  • 2 cups shredded and cooked chicken
  • 1 small bunch cilantro
  • 1 cup sour cream
  • 1/2 cup mild tomatillo salsa
  • 2 cups shredded cheddar cheese
  • Salt and Pepper to taste
Directions
  1. Preheat oven to 400 degrees.
  2. In medium bowl, combine onion, corn, beans, chicken, sour cream, 1 cup cheese, salsa, cilantro, salt and pepper. Mix.
  3. Spray medium casserole dish with non stick spray.
  4. Line bottom of dish with tortilla chips.
  5. Top with onion and bean mixture.
  6. Add another layer of tortilla chips.
  7. Finish with remaining 1 cup cheese.
  8. Cover and bake for 45 minutes.
  9. Remove cover for 15 minutes or until cheese is golden brown.
Tips
  • Use store bought rotisserie chicken.
  • Use medium or hot salsa if want it spicy.
  • Assemble this dish during lunch time and refrigerate. Pop it in the oven one hour before dinner.
